Fluffy Banana Muffin

Tea-Time Special. Batches freeze well. Pop them in the microwave and have them any time you want.


INGREDIENTS

 ½ cup coconut oil or butter                

½ cup sugar                                     

2 eggs                                                    

4 bananas                                             

1 ¼ cups green banana flour                          

1 tsp baking soda                                      

½ tsp salt                                                      

1 tsp vanilla essence                                                                                                      

METHOD 

  1. Preheat oven to 180 degree

  2. Cream together oil( butter) and sugar

  3. Add eggs and crushed bananas.

  4. Combine well.

  5. Sift together flour, baking soda, and salt (I do it twice) 

  6. Add to creamed mixture. Add vanilla.

  7. Mix just until combined. Do not over mix.

  8. Pour into muffin pan

  9. Bake at 180 degrees for 20 minutes or until poker in centre comes out clean
